Bushwacker Mocktail

Ingredients
- 2 oz. of toasted coconut syrup
- 1.5 oz. of heavy cream or half and half for a lighter bodied cocktail
- 1.5 oz. of espresso or cold brew
- 1.5 oz. of coconut water
- .5 oz. of rich demerara
- .5 oz. of chocolate syrup
- 1 whole egg white
- 1/2 egg yolk
- 4 drops of saline solution
Directions
Dry shake all ingredients until homogenized and a good foam has formed. Add ice and shake until well chilled. Strain into wine glass or glass of choice.
Toasted Coconut Syrup
- 125g Toasted Coconut
- 500g Cane Sugar
- 500g Water
- A teaspoon of Vanilla Extract or Vanilla Bean Paste
Bring to a low boil. Turn the heat down and let simmer with the lid on for 30 minutes. Remove from heat and allow to cool. Strain off the solids. Store in the fridge.
Rich Demerara
- 250g Demerara Sugar
- 125g Water
Bring to a low simmer to dissolve sugar. Remove from heat and let cool. Store in fridge
