Oysters Rockefeller Recipe

Ingredients
- 2 dozen medium-sized oysters
- 1 small onion, grated
- 1/8 tsp, of cayenne pepper
- 1 cup of chopped spinach (fresh or frozen)
- 1 tsp of Worcestershire sauce
- 1 cup of butter
- 3 tsps. of minced parsley
- 1/2 cup of cracker crumbs
- 2 bay leaves
- 3 tsps. of dry sherry
- 1/4 tsp. of salt
- 1/2 tsp. of celery salt
- Parmesan cheese
Directions
In a large bowl, combine onion, spinach, parsley, bay leaves, salt, celery salt, cayenne pepper, and Worcestershire sauce.
In a saucepan, melt butter and add crumbs and sherry. Add spinach mixture and stir well. Cook over low heat for 1-2 hours, stirring occasionally.
Place oysters in a casserole dish or individual oyster shells. Cover with spinach mixture and sprinkle heavily with cheese. Crumble crackers on top.
Bake at 375° for 35 minutes, until bubbly and crumbs are deep golden brown.
